Tofu Scramble

This is a vegan option for a protein-rich breakfast. The tofu is scrambled with vegetables like spinach, peppers, and onions, and it's seasoned with spices like cumin and turmeric.

  • 1 block extra-firm tofu, drained and pressed
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup spinach, chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 1/4 cup vegetable broth


  1. Heat the olive oil in a large frying-pan over medium heat.
  2. Add the onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add the spinach and cook until wilted, about 2 minutes.
  4. Crumble the tofu into the frying-panTofu Scramble and cook, stirring frequently, until it is heated through and starting to brown, about 5 minutes.
  5. Add the cumin, turmeric, salt, and pepper and cook, stirring constantly, for 1 minute more.
  6. Stir in the nutritional yeast and vegetable broth and cook until the scramble is heated through and creamy, about 2 minutes more.
  7. Serve immediately.


  • Use extra-firm tofu for the best texture.
  • Press the tofu to remove as much moisture as possible. This will help the tofu scramble to be more fluffy and less dry.
  • Crumble the tofu into the skillet with your hands for a more rustic texture.
  • Use a variety of vegetables to add flavor and nutrition to your tofu scramble.
