Omelette with avocado and tomato

This omelet is packed with protein and healthy fats from the eggs, avocado, and tomatoes. It's also a good source of fibre from the whole-wheat tortilla. Perfect for breakfast or lunch.

  • 2 large eggs
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped tomato
  • 1/4 cup sliced avocado
  • 1/4 cup shredded cheddar cheese (optional)


  1. In a small bowl, whisk together the eggs, water, salt, and pepper.
  2. Heat the olive oil in a large frying-panOmelette over medium heat.
  3. Pour the egg mixture into the frying-pan and cook, stirring occasionally, until the bottom is set, about 2 minutes.
  4. Sprinkle the tomato, avocado, and cheese (if using) over half of the omelet.
  5. Fold the other half of the omelet over the filling and cook until the cheese is melted and the omelet is cooked through, about 1 minute more.
  6. Slide the omelet onto a plate and serve immediately.


  • For a fluffier omelet, add a splash of milk or cream to the egg mixture.
  • To prevent the omelet from sticking to the pan, coat the pan with cooking spray or butter before adding the egg mixture.
  • If you want a crispy omelet, cook it over medium-high heat until the bottom is golden brown before folding it in half.
  • Garnish the omelet with your favorite toppings, such as chopped chives, fresh parsley, or a dollop of sour cream.
