Egg Muffins

These are a great way to make a batch of breakfasts ahead of time. Simply whisk together eggs, milk, protein powder, and your favourite vegetables. Then, pour the mixture into muffin tins and bake. You can eat these muffins cold or heat them up in the microwave.

Cook Time: 20 minutes
Total Time: 30 minutes


  • 12 large eggs
  • 1/2 cup milk
  • 1/4 cup protein powder (optional)
  • 1/4 cup shredded cheese (optional)
  • 1/4 cup chopped vegetables (such as spinach, peppers, onions, or mushrooms)
  • Salt and pepper to taste


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 12-cup muffin tin or line with paper liners.
  3. In a large bowl, whisk together eggs, milk, protein powder (if using), cheese (if using), vegetables, salt, and pepper.
  4. Pour the egg mixture into the prepared muffin tin.
  5. Bake for 20–25 minutes, or until the eggs are set.
  6. Let cool in the muffin tin for a few minutes before removing to a wire rack to cool completely.


  • You can add any type of vegetables that you like to your egg muffins.
  • If you are using a non-stick muffin tin, you may not need to grease it.
  • You can also add cooked meat, such as bacon or sausage, to your egg muffins.
  • To make ahead, simply prepare the egg muffins and let them cool completely. Then, store them in an airtight container in the refrigerator for up to 3 days.
  • To reheat, simply microwave the egg muffins for a few minutes until heated through.
