Breakfast Burrito

This is a hearty and filling breakfast that is perfect for on-the-go. Simply fill a tortilla with scrambled eggs, beans, cheese, vegetables, and salsa. You can also add protein powder to your scrambled eggs for an extra boost of protein.

Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup cooked breakfast sausage, crumbled
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • 1/4 cup salsa
  • Sour cream, for serving (optional)
  • Hot sauce, for serving (optional)

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  2. Heat the olive oil in a large frying-pan over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the sausage to the frying-pan and cook until browned, about 5 minutes more.
  4. Add the eggs to the frying-pan and cook, stirring occasionally, until scrambled and cooked through, about 5 minutes.
  5. Stir in the black beans and cheese.
  6. Warm the tortillas in the microwave for 30 seconds.
  7. To assemble the burritos, spread 1/4 cup of the scrambled egg mixture down the centre of each tortilla. Top with 1 tablespoon of salsa and a dollop of sour cream (optional). Roll up the burritos tightly and serve immediately.
  8. For a spicier burrito, add a few dashes of hot sauce to the scrambled egg mixture.

Notes

  • You can use any type of sausage you like in this recipe. I like to use chorizo sausage, but you could also use ground beef, turkey, or chicken.
  • If you don't have any black beans on hand, you can use pinto beans or kidney beans.
  • You can also add other vegetables to your breakfast burrito, such as diced tomatoes, corn, or spinach.
  • If you want to make your breakfast burritos ahead of time, you can assemble them and then wrap them tightly in plastic wrap. Refrigerate for up to 24 hours before serving. To reheat, microwave the burritos for 1-2 minutes, or until heated through.
